How can I make the Bacardi Rum Cake, if I do not have the boxed cake mix?

I am currently out of the US and there are no boxed cake mixes here. Any ideas how I can make the Bacardi Rum Cake without it? Thank you for any help you can offer!|||Homemade Yellow Cake "Mix"





2 cups flour


1 1/2 cups sugar


4 teaspoons baking powder


1 teaspoon salt


1/4 pound (1 stick) butter or margarine, at room temperature, cut into 1/2-inch cubes


3 tablespoons oil





Place all the dry ingredients in a large mixing bowl. Combine thoroughly with a fork.





Add the butter or margarine and the oil. Blend with an electric mixer on the lowest speed until the fats are evenly distributed and the mix has the consistency of fine gravel.





Keep refrigerated in a covered container. To be used within 3 months.








Rum Cake





Yellow cake mix above


1 cup chopped pecans


1 package instant vanilla pudding (3 戮 oz size)


4 eggs


陆 cup water


陆 cup oil


陆 cup dark rum





Glaze:


陆 cup butter, melted


1 cup sugar


录 cup dark rum


录 cup water





Preheat oven to 350 degrees F. Oil and flour bundt pan. Chop pecans and place in bottom of bundt pan. Mix cake mix, pudding mix, eggs, water, oil and rum in mixer for two minutes on medium speed. Continue to mix for 1 more minute on high. Pour over pecans in bundt pan. Bake as cake mix directs, until toothpick inserted in cake comes out clean. Leave cake in pan until glaze is made.





Mix glaze ingredients in saucepan. Heat to just slightly boiling to make sure sugar is all dissolved. Prick bottom of cake and slowly spoon the glaze over the bottom of the cake, being careful to make sure it doesn鈥檛 run over the sides. Let sit so glaze absorbs in cake. I usually let it sit about half an hour. After glaze is absorbed invert cake onto a plate. Serve and enjoy!|||Yellow cake mix recipe-you'll need for Bacardi recipe

2 1/2 cups buttermilk


3 3/4 cups all-purpose flour

BACARDI'S FAMOUS RUM CAKE Recipe





Ingredients:


1 cup chopped pecans or walnuts


1 18 1/2 oz. packaged yellow cake mix (recipe from above)


1 3 3/4 oz. pkg. Jell-O Vanilla Instant Pudding and Pie filling.


4 eggs


1/2 cup cold water


1/2 cup Wesson oil


1/2 cup Bacardi dark rum


GLAZE:


1/4 pound butter(cube)


1/4 cup water


1 cup granulated sugar


1/2 cup Bacardi dark rum











Directions:


Preheat oven to 325 degrees F. Grease and flour a 10 inch tube pan, or 12 cup Bundt pan. Sprinkle nuts over bottom of pan. Mix all cake ingredients together. Pour batter over nuts. Bake 1 hour. Cool. Invert cake onto a serving plate. FOR GLAZE: melt the butter in a saucepan. Stir in the water and sugar. Boil five minutes, stirring constantly. Remove from heat. Stir in the rum. Prick all over the top of the cake. Drizzle and smooth glaze evenly over top and sides. Allow the cake to absorb the glaze completely. Repeat until glaze is used up. Have waxed paper underneath and continue to scoop up the glaze and add it until the cake is saturated. This is a rich, moist cake. A dollop of whipped cream can be added for a special touch.|||http://www.recipezaar.com/14499|||Make one from scratch? or drink the Bacardi and try again when you get to a place that sells cake mixes.|||Just find a regular yellow or white cake recipe at Betty Crocker or Better Homes %26amp; Garden or any of the other recipe websites. Then reduce the liquids to adjust for the fact that most box mixes use water, eggs and oil.
